Job title: Executive Chef
Department: Food and Beverage
Reporting directly to: Director of Food & Beverage General Manager
Responsible for: Food and Beverage production
Hours of work: 48 hours per week and as required
Location: Riyadh, Jeddah and as required

 

Scope and Purpose of the Position

 

Manages all kitchen operations including Stewarding operations with an emphasis on maintaining hygienic standards and practices, staff training, and overseeing the preparation and presentation of a consistent food product which meets customer’s expectations

Provides functional assistance and direction to the kitchen operation.

Interacts with individuals outside the hotel including, but not limited to, VVIP Guest, suppliers, government officials.

Coordinates functions and activities with other Food and Beverage department heads.

Duties and Responsibilities:

Key Responsibilities

1.      Manages all functions of the Food Production and Stewarding operations to achieve the optimum departmental profit

2.      Manages all functions of the Food Production and Stewarding operations to achieve the optimum quality level of food production and sanitation

3.      Oversees special events and VVIP Food.

4.      Makes recipes and maintains up-dated and accurate costing of all dishes prepared and in the Food and Beverage operation

5.      Develops and writes standard recipes

6.      Develops new dishes and products

7.      Takes steps to ensure that outstanding culinary technical skills are maintained

8.      Maintains comprehensive product knowledge including ingredients, equipment, suppliers, markets and current trends and make appropriate adjustments to kitchen operations accordingly

9.      Controls and analyzes, on an on-going basis, the level of the following: Costs, Issuing of food, Quality, and presentation of food products, Condition, and cleanliness of facilities and equipment, VVIP Guest satisfaction

10.  Develops with the Director of Food and Beverage popular menus offering VVIP guests TEN OUT OF 10

11.  Attends and participates in other meetings as required by the administrative calendar

12.  Keeps an up-dated Company Policies and Procedures file and updated files on the following Food Production matters: Recipes, Standards, Personnel and Training, Meetings, Projects, Material, and Equipment, Miscellaneous

13.  Sets Food Production and Stewarding goals and develops strategies, procedures, and policies

14.  Sets standards of all food and equipment purchases in accordance with VVIP Needs

 

 

VVIP  Service

1.      Demonstrate VVIP service attributes in accordance with company standards including Being attentive to VVIP Guests, Accurately and promptly fulfilling VVIP Guests requests, Anticipate VVIP Guests needs

2.      Maintain a high level of knowledge which affects the VVIP Guest experience

3.      Demonstrating a ‘ VVIP service’ attitude

4.      Taking appropriate action to resolve VVIP guest complaints

5.      Appreciate the dynamic nature of the Palaces and extend this VVIP service attributes to all internal VVIP Guest

 

People Management

1.      Work within the Company Human Resource Management System to ensure the departmental performance of staff is productive.

2.      Duties include: Plan for future staffing needs, Recruit in line with company guidelines, Prepare detailed orientation programmes for new staff

3.      Maintain a comprehensive, current and VVIP guest focused set of departmental standards and procedures and oversee their implementation

4.      Ensure training needs analysis of your departmental staff is carried out and training programmes are designed and implemented to meet needs

5.      Deliver training

6.      Actively work at developing your direct reports and identify high potentials

7.      Maintain training records for all direct reports and ensure they do the same for their staff

8.      Conduct probation and formal performance appraisal in line with company guidelines

9.      Coach, counsel and discipline staff, providing constructive feedback to enhance performance

10.  Approve leave requests after considering peaks and troughs in the business

11.  Regularly communicate with staff to maintain positive relationships

 

Health, Safety and Security

1.      Familiarise yourself with Company Health and Safety Policies and ensure your areas promote and comply with them

2.      Take responsibility to rectify hazardous situations, reporting major areas of concern to your Palace Manager or designate

3.      Familiarise yourself with property safety, first aid and fire and emergency procedures and actively enforce these in your area of responsibility

4.      Ensure security incidents in your operational area are reviewed and corrective measures implemented to prevent recurring incidents

 

General

1.      Comply with the Company Corporate Code of Conduct

2.      Familiarise yourself with the company values and model desired behaviors

3.      Perform tasks as directed by the Manager in pursuit of the achievement of business goals

4.      Adhere to the Company policies and procedures for quality, environment and food safety.

 

 

Additional Duties:

 

1.      To attend any meeting or training sessions as required by management.

2.      To be conversant with:

 

a) The company Fire Procedures

b) The company Security Procedures

c) The company Health and Safety Policy and Procedures

d) The company facilities and attractions

e) Company operation standards and department procedures

 

3.   To adhere to the Company policies and procedures for quality, environment and food safety.

Salary

 

7000.00 USD  monthly
With experience more than 4 years 10000.00 USD monthly
With experience more than 6 years 15000.00 USD  monthly
Accommodation (in a five-star hotel as a customer)
Due to the specific job and will provide personal guard {Bodyguard }
